I’ve never been much of a cook, probably because I grew up watching my mom juggle work and family life, so she didn’t have much time to come home at night and cook us homemade meals. Don’t get me wrong, we still ate good but there were a lot of frozen meals that were thrown in the oven 🙂 Somehow I lucked out marrying a man who likes to cook and is very good at it. But ever since we got married and especially once Ryder was born and started eating solids, I’ve been making more of an effort to try and cook at least a couple of the meals during the week. There’s something about cooking a meal and watching your family enjoy it so much that they’re literally licking the plate clean (I see you Ryder).
I’ve rounded up 5 of my go to meals to make. I wouldn’t say we’re super healthy eaters (I really want to work on that) but these recipes are on the healthy side. Do not let that fool you, they’re delicious! They’re always a hit with the family and, even better, all take 30 minutes or less to make. Can’t beat that. Here you go!
Crockpot Picadillo Stuffed Peppers

Crock Pot Chicken and Black Bean Taco Salad
Can you tell that I really like Skinnytaste? My husband was a little skeptical about this one at first (he doesn’t understand the notion of eating just a big salad for dinner) but he ended up really liking it. It’s filling and flavorful.
Crock Pot BBQ Chicken
This recipe is probably my favorite out of all of them. It’s so tasty and really good to make if you’re going to be gone all day, just let the chicken cook in the crock pot all day, throw on a bun (I like to use nice fresh buns or rolls, it makes it that much better), and top with whatever you want.
OK, this technically takes 45 minutes to cook, but I had to include this recipe. I like how you can tailor it by adding or replacing veggies to your liking.
